2002 gmc sierra 1500 5.3 v8 p0507

post here’s a little about the truck. It has 180000 miles. The service engine light has not been on until now. Just 2 thousands miles ago I hopped a curb and hit a sign. I do not remember the incident in detail. Got the truck realigned and inspected and everything was good. Just last week I have to emergency drive to southern California from reno at 2am. Its about 8 hours I’m not a speed racer but I cruised controlled about 75 until I started to hit traffic at 8 in the morning. Anyways I hot socal. Stayed there for a a hour or so the drove to Vegas. Spent the night there and drove back to reno the following afternoon. 1150 miles in 48 hours. After I got home I noticed the trck is idling high or it will idle low then high. Low then high.and it will keep doing that until I put it in drive and go. Cold starts the truck shakes while starting and once started he idle problem starts So I bought a simple obd2  scanner and this is what I got. P0507. Not sure how to go about diagnosing this so help would be appreciated I do not want to take it to the shop because I don’t have a lot of money but.if.its my only choice I will. I also changed the spark plugs and cleaned the air.filter in vegas just recently and had a low coolant problem in vegas where the truck. Was running at 250f degrees until I pulled into a Walmart and topped off he reservoir
